LITHUANIAN BREAD 1/4 cup vegetable oil6 oz lean bacon ( finely chopped) 2 Tbs. scallions ( finely chopped) 1/4 cup honey 2/3 cup milk 1 egg 6 oz cottage cheese 1 1/4 cups whole-wheat flour 1 1/4 cups white flour 2 teaspoons baking powder 1/2 teaspoon baking soda
scant teaspoon of salt In a small saucepan, fry the bacon in the oil until cooked thoroughly. Remove from heat
and stir in the scallions. Set back on heat and add the honey. Heat clear through and remove from the heat. Stir in the milk, egg, and then the cottage cheese. Blend thoroughly and set aside. In a large bowl combine the flours, baking powder, soda and salt. Make a well and pour in the cottage cheese mixture. Blend just to moisten
the ingredients. Preheat oven to 375 degrees. Put the dough into a greased and floured 9x5x3 inch loaf pan. Thump several times on the counter or you will get holes in your bread.
Bake for approx. 45-50 minutes or until golden brown. Cool on a wire rack.
My grandmother added raisins to the original dough for a special treat. |
